Jurassic Quiche - March 6, 2008

I created this recipe to take advantage of the bounty of early March farmers markets here in California. The word 'jurassic' comes from the antique and heirloom quality of the main ingredients-- Romanesco cauliflower, dinosaur (Lacinato) kale, and spelt (antique wheat grain). These are a delicious, smokey and spicy vegan treat! Adapted from the Weight Watchers website. The only change I made was to spray the raw florets with a little cooking spray as well, just to get the spices to stick a little better. AND I increased to roasting time to 15-20 minutes, instead of just 10. These are a nice accompaniment to an Indian inspired meal, or a curry. Cauliflower and Caramelized Onion Tart (Lighter Version) - March 5, 2008

This recipe is a lighter version of one that appeared in Bon Appetit (March 2007). You reduce a lot of calories and fat but retain all the flavour! You can also sautee and sprinkle in other veggies like mushrooms or spinach. To save time, this recipe can be made 1 day ahead. Cover and chill cauliflower and onion separately.
