Buttermilk Pancakes - July 5, 2008

I found this recipe on bbonline.com several years ago and have been using it ever since. I double the recipe for my family and for the flour use 1 part wheat flour to 3 parts white flour. I forget to add the oil half the time and it is good either way. Make sure to add some oil if you are making waffles from this so they come out crispier on the outside. -- posted by tree

Survival for the non-cook. This was the first dish I ever prepared. This has become a staple for my younger "May I come eat at your place" brother, when the answer is "No, you may not." This comes from the Prevention Outsmart Diabetes Book that I've had a while now. I've made this with a variety of seasonal fruits. Picnic Pasta Salad - July 5, 2008

A Caesar pasta salad with lots of fresh veggies, chicken, and cheese. Very tasty and hearty. Easy to put together, especially if you use a rotisserie chicken. Is a meal in itself. The Fluffiest Pancakes You Will Ever Have - July 5, 2008

I love pancakes. Who doesn't! These pancakes are actually inspired by a book character by Dean Koontz. The characters name is Odd Thomas and I imagine that if he were to serve me his fluffy pancakes in Pico Mungo that this is how they would be. Keep in mind that this recipe is just a method. You can add ANYTHING to these guys to jazz them up. I like blueberries, raspberries, and sometimes I even add scrabled eggs, crumbled sausage, and shredded cheese. Yum! -- posted by alamahara

Summer Blueberry Cake - July 5, 2008

This cake hits the spot in the summer, when you want a lighter dessert. I love it for the 4th of July, when I serve blueberries and sliced strawberries over the top for a red, white and blue theme. For busy moms, you can make your favorite white cake according to the box, use a can of blueberry pie filling (12 in the cake and 12 on top after baking) and a container of cool whip - which is how I used to make this cake back in the 1970's.
