Bran-Currant Muffins - May 12, 2008

These are moist and flavorful, just pleasantly sweet. The recipe makes quite a lot of muffins, but the batter will keep in the fridge for up to 6 weeks. From the back of a box of Sun-Maid Zante Currants. I'm sure raisins or other dried fruits would work as well, but the currants are delightful. -- posted by pattikay in L.A.

Vegan Apple Muffins - May 9, 2008

A yummy muffin, especially straight from the oven. Substitute the rice milk for whatever suits your diet (soy, oat, almond, dairy, etc). I believe I adapted this muffin from a recipe in a Canadian Living magazine last fall. -- posted by KDub

Strawberry-Lemonade Muffins - May 9, 2008

I couldn't sleep tonight, so I decided to get up and do a little experimenting in the kitchen. I've been wanting to make muffins, and have yogurt that needs used before it expires, so this is what I came up with. I used frozen strawberries that I partially thawed before chopping. I also didn't measure them, but just used up what I had left in the freezer, and guessed at it being about a cup. The first pan just came out of the oven, and they smell (and taste!) delicious, but when I took a bit of.

Gluten Free Disappearing Sweet Potato Muffins - May 8, 2008

This is a conversion of Recipe 161227. I cut the sugar back to 1 cup to make them and I still found them sweet so next time I'll be cutting it back to the 34 cup listed. I you don't love the flavour and can't put your finger on it it's the quinoa. I'd replace it with more brown rice flour or sorghum if you don't like it. I grind the walnuts because we don't like them, but they are a superfood. -- posted by SWalker

Miss Cindi's Banana-Chocolate Chip Muffins - May 8, 2008

I got this recipe out of the Guidepost magazine and have made them several times. You can use half the amount of the chocolate chips and sugar for the same great flavor. I substitute milk chocolate chips for the semi-sweet. These are very moist and delicious. -- posted by Legna
