Creamed Tuna or Chicken With Peas - March 19, 2008

This classic, budget-friendly dish from the past is just as good at is always was -- especially if you skip the salty, canned mushroom soup and make it with good, homemade chicken stock (I suggest Recipe 219819 ), and frozen peas instead of canned peas. This particular version is a bit richer in meat than strictly necessary so if your budget is especially tight you can cut it down and it will be fine. Tuna Potato Croquettes - March 17, 2008

Simple, quick and comforting, these golden cakes go well with a spoonful of reduced-fat sour cream and a sprinkle of chopped fresh chives. Try mixing in a bit of chopped dill, capers or lemon zest, or using canned salmon for a variation. From arcamax.com. -- posted by KelBel

Passover Tuna Gefilte Fish - March 13, 2008

This recipe comes from a cookbook published by a local B'nai B'rith Women chapter in 1963. I haven't yet tried this recipe, but I plan to this Passover! If you try it first, please let me know what you think. -- posted by Susiecat too

Tuna With Tomato-Basil Sauce (Tonno Alla Livornese) - March 11, 2008

This Tuscan recipe uses classic Italian ingredients. This recipe is so easy to make. I found it in Bon Appétit Magazine (May 2000) and I haven't changed a thing! It's even better if you sear the tuna steaks on the grill (for about 2 minutes each side). -- posted by blucoat

Budgeted Tuna Salad Sandwich - March 10, 2008

Well, we all don't have that much time or that much money, so, this will have to do! A great quick sandwich that I have eaten... a lot. I suggest putting the extra tuna mix into your fridge. -- posted by Kitchen Witch Myrkr
