And then it became a regular favorite requested by the whole family as well. It can be adapted for people who aren't lactose intolerant by just switching out the lactose-free milk for regular milk I normally double this recipe. Brown rice is used instead of arborrio rice to add a bit of protein and fiber (this also cuts down on the amount of time spent stirring, for which risotto has become so notorious). It also provides that wonderful toothy texture that good risotto should always provide. It is delicious and sure to impress!
