Apricot Chicken - June 13, 2008

When the rest of my family would have chicken parmigiana, I created this recipe for my one child who was lactose intolerant. And then it became a regular favorite requested by the whole family as well. It can be adapted for people who aren't lactose intolerant by just switching out the lactose-free milk for regular milk I normally double this recipe. Enjoy! -- posted by Acadia

Warm Lentil, Spinach & Beetroot Salad - June 12, 2008

Spring Risotto (Vegan) - June 12, 2008

A nutty springtime risotto with peas, corn and young onions prominantly featured. Brown rice is used instead of arborrio rice to add a bit of protein and fiber (this also cuts down on the amount of time spent stirring, for which risotto has become so notorious). It also provides that wonderful toothy texture that good risotto should always provide. It is delicious and sure to impress!
