This zippy, mildly spicy sauce was made by the ladies of the night in Italy after a day's work. Use whatever noodle style your family enjoys, but I recommend traditional linguine or penne. This dish is extremely adaptable to your own taste. I took a recipe that I found on here, and tweaked it to make it my own. My husband and kids loved this meal, and asked for it to be made more often. I've only made it once but it was really yummy. Vindaloo is a type of Indian curry and uses several different spices. If you do not have some of these spices they are easy to find at a neighborhood grocery store. I just made it again this morning and it had all my onlookers bewitched! They have never thought of using potato chips or the other ingredients that way and then to top them with eggs - that is FANTASTIC! You can have it for breakfast, lunch or dinner. Make sure you use the best-quality potato chips - med-thick and not too brown! Otherwise the dish will taste burned.
