If you grant a "non-revocable" right to someone over a piece of intellectual property you own, you can't just yank it back. According to CC, a CC license is non-revocable, so someone using your work that you have CC-licensed should be fine even if you change your mind about the license. (The sticky bit is proof. Obviously, putting something out as creative commons and then taking those permissions away runs counter to the kind of openness I think we'd all like to promote--but I'm pretty sure you could do it.
