She also squeezes out the radish till it's dry, and boils the vinegar-sugar mixture once before adding the radish and carrots when it has cooled down. The result are very crunchy discs swimming in a casual and toned-down sweetsour bath. I keep some in the fridge and take it out when I serve fried or grilled stuff.
