Blueberry Popsicles - June 26, 2008

This came in a recent Momsense magazine. Since blueberry season just started here in Virginia, it was the perfect find for me today. It makes wonderfully tasty and healthy pops...eight 5-ounce pops to be exact. Another win in the battle to get rid of HFCS in this house. -- posted by Kitchen Witch Steph

Macaroni Salad - June 25, 2008

This is an easy and low-fat pasta salad, enjoyable with grilled goods, on a picnic or even as side dish. If it has to be prepared beforehand, try to add the yoghurt and mustard shortly before serving, otherwise it gets dry. Preparation time does not include the time needed for cooking and cooling of the pasta. -- posted by lacriath

Santa Fe Chicken Freezer Kit - June 20, 2008

This is a lighter version of the Monterey Chicken Freezer Dinner Kit that I found on here. We're very health-conscious in my family, so I like taking recipes and playing with them! This is a great way to use all those veggies you've got growing in your garden. Prep time includes time for thawing. -- posted by Lissa.Blair

Red Pepper Lemon Shrimp - June 20, 2008

A fast and easy shrimp dinner. Use quality ingredients (good wine, ripe lemons, FRESH shrimp) and it's a hit every time! We often add steamed snow peas and diced red peppers at the very end to get some veggies in there, and serve a simple salad on the side. Or, make half as much pasta and save the leftover shrimp for tacos the next night--heaven! We also like to add a pinch of saffron to the shrimp for great color, or use blood oranges (in season) in place of the lemon--play around and see..
