All-American Apple Pie - July 5, 2008

It's the 4th of July...what better way to celebrate than with an All-American dish like homemade apple pie There are lots of recipes out there, but I prefer this one that calls for the addition of cinnamon, nutmeg, and ginger for some added spice. Also, I like my apple pie overflowing with apples (an apple pie isn't supposed to be flat like a pumpkin or cream pie!) so this version has LOTS! The ingredients list granny smith, but I tend to use a variety, incorporating granny smith, gold...

Single-Serve Microwave Muffin - July 5, 2008

Okay, so this may not be exactly like a muffin, but it's pretty close, and was still pretty tasty! The taste and texture turned out to be a little more like that of a very thick pancake, but that's close enough, right ;) Anyway, I was wanting just one muffin this morning, and decided to tinker around a little and make just one in the microwave. I'll probably play around with this a little more, but here are the basics. Really, you could probably add fruit or chocolate chips or whatever to this,.

Sweetest Corn on the Cob - July 5, 2008

Chicken Korma (Curry) - July 5, 2008

A variation on Indian curry, but using yoghurt instead of coconut milk. A deliciously spicy (but not hot- unless you want it to be) dish. One of my favorite Paki dishes as taught to me by the owner of a Pakistani restaurant. Serve with Roti and maybe a side of cucumber yoghurt. This recipe takes a while, has a lot of ingredients and steps, and bennefits from mis-en-place- but it's WORTH IT! -- posted by CelticBrewer
