Shredded Chile Beef - July 4, 2008

Crock pots are a wonderful thing and this recipe is a reminder of how convenient they are in any season. A variation of a pork roast recipe. I found myself with a thawed beef roast instead of pork, so some fancy footwork was applied. DH says the result is better than the original shredded pork. See directions for serving suggestions, or use your imagination. This freezes beautifully both as a 'dump' recipe before cooking or after it's cooked for reheating later. -- posted by Ma Field

Japanese Cucumber-Onion Pork Salad - July 3, 2008

This is a Japanese family recipe. Any fresh cucumber that you would put in a salad can substitute for Japanese cucumbers. If the onions are bitter, soak the thin slices in water for about 15 minutes or until bitterness is gone and drain them thoroughly. Less oil can be used in non-stick pans. Chicken Karahi (Wok) - July 3, 2008

A karahi (also spelled karai - both pronounced the same "ka-rai") is a type of thick, circular, and deep vessel (similar in shape to a wok). This is the Pakistani chicken dish that I most often prepare and was taught to me by the owner of a Paki restaurant. Like many of their dishes, it's spicy (but not necessarily hot) and takes quite a few steps to complete. But it's MORE than worth the trouble. I always serve with Roti -- posted by CelticBrewer

Fall off the Bone Ribs - July 3, 2008
