If you prefer, you can whip 2 cups of whipping cream and omit the whipped topping. You can also use full-fat cream cheese. I modified the original recipe by using some whipped topping, regular whipping cream instead of heavy, and the neufchatel to lessen the fat and calorie content somewhat. If you want to reduce the sugar, use 12 cup Splenda in place of the sugar you beat into the cream cheese. Do not substitute (much) Splenda for the sugar beat into the egg whites.http://www.recipezaar.com/311615 Kristi's Chili Con Carne- July 2, 2008 This is the way I make the chili. It is very nice. :) Sometimes I only use 1 lb of beef and a can of black beans instead of 2 lbs. If you use the beans, make sure you toss in about a tablespoon's worth of cinnamon to help with the black beans' flavor. Also, I like to keep the veggies nice and chunky so you can still identify them after a long stewing. It was so moist and tasty that I had to post it! You can probably half it to make muffins, but I haven't officially tried that yet. You can add ginger and allspice to make it a spice cake too. Definitely serve to gluten-eaters guilt free; it's delicious! I always use spinach, but I bought some Rainbow Swiss Chard at the local farmer's market today, and I thought I'd give it a try in quiche.
