Smoked Salmon and Wasabi Tea Sandwiches - June 24, 2008

Not sure if you'd see this at "high tea" in Victoria, but it's definitely a way to show off Canada's beautiful salmon. Something different to add to a platter with a variety of tea sandwiches, or just a nice afternoon snack. Wasabi powder is now available in the spice or Asian section of most grocery stores. I set out last night to make this marvelous sounding Recipe 224192, but added so many different things that I didn't feel it would be fair to rate it. I wanted more of a hearty stew, but the inspiration was definitely found in that recipe. Salmon With Wasabi and Ginger - June 13, 2008

This recipe is loosley based on something similar from Cooking Light. My wonderful daughter liked it so much, she took all of the leftovers for lunch and didn't leave me any!!! I freeze my ginger and when I need it, I take it out of the freezer for about 5 minutes before I grate it. If you let it thaw somewhat, it is easier to grate and you get more of the ginger rather than the ice crystals -- posted by Abby Girl

Turn canned salmon into a real tasty treat! Eating Salmon doesn't have to be expensive (Canned Salmon is about 75% less than market fresh!)! This recipe not only stretches Salmon, but makes a nutritious and filling main course!
