They had the best carrot cake that I've ever had and I've been looking for a recipe that would compare ever since and I've finally found one. This cake is light and fluffy and not the heavy spice cake that most carrot cakes are. I used the Japanese equivalent of American vegetables, imported Rotel Tomatos and Swansons Chicken Broth and came up with a pretty good substitute. In Japan, you can't find large cuts of meat. Most of the meat is cut almost paper thin. The pork I use in this is very thin and I usually add it to the soup during the last 15 minutes or so. It cooks quickly in the simmering soup. I found that the zucchini released a lot of liquid. I drained it off a few times during cooking, so it didn't get too soggy. If you like gravy with your meatloaf, I would save that liquid to make it with. My brother in law hates carrots but he did llike this casserole.
