Vegan Southern Collard Greens - May 31, 2008

My friends love the ham hock collards I make and there's two recipes close my version (Recipe 221708 and Recipe 41320), but I always feel bad leaving out my vegetarian and vegan friends. This is what the vegan version I came up with for them and for myself when I was vegetarian. It still has a lot of the body the meaty version has, but less fat, and no pork. I brought this to a party recently and some people liked this more than my ham hock ones! Other types of greens can be substituted...

Philippines Monggo Beans and Pechay (Mung Beans and Bok Choi) - May 29, 2008

This is my favorite way to eat mung beans and bok choi. I think it's the ginger flavor that really makes it good to me. It's a Philippines dish that my Filipino friend and helper, Marina, makes for me often. Mung (Monggo) beans are extremely high in calcium and are also have a lot of iron and protein. Bok Choi (Pechay) also has a lot of calcium, iron, vitamin A, and a ton of vitamin C. So, this dish is really nutrient packed by these two vegetables alone! Cooking time doesn't include time.

Azerbaijani Kefir and Greens Soup - May 29, 2008

My new favorite book, "Olive Trees and Honey" by Gil Marks, is the source of this delicious soup. If Kefir is not available to you, substitute plain yogurt. This soup is best served freshly warm just as it is done, and is traditionally served after the main course.
