Ambrosia Salad 100 - January 16, 2008

Uses fat-free evaporated milk instead of condensed milk or sour cream. This has always turned out well for us. From the Carnation Milk recipe site. Time includes 30 minutes of chilling time. Soft Sherbet Coconut Macaroons - January 15, 2008

A soft macaroon that uses sherbert and cake mix to make them very simple to make. You can change the background flavor by changing the type of sherbet. I usually use pineapple sherbet but my friend made them with raspberry and they had a very unique flavor. -- posted by HokiesLady

Maja Blanca (Filipino White Pudding) - January 8, 2008

I tried this coconut-flavored treat when I needed something to take to a pot luck for my Filipino-American Experience class. It comes from Phillipine Recipes Made Easy (which seems to have a lot of authentic Filipino dishes). It seems to be just like the Hawaiian Haupia to me, except some Haupias have fruit mixed in. To dilute coconut milk, use 12-34 cup water to every 1 cup of milk. Make sure you use coconut MILK and NOT coconut CREAM or JUICE. Also, be sure to vigorously shake the can of milk.
