I double the recipe for my family and for the flour use 1 part wheat flour to 3 parts white flour. I forget to add the oil half the time and it is good either way. Very tasty and hearty. Easy to put together, especially if you use a rotisserie chicken. Is a meal in itself. Requested for any warm weather get-together. No mayo, so it keeps better on warm days. These pancakes are actually inspired by a book character by Dean Koontz. The characters name is Odd Thomas and I imagine that if he were to serve me his fluffy pancakes in Pico Mungo that this is how they would be. Keep in mind that this recipe is just a method. You can add ANYTHING to these guys to jazz them up. I like blueberries, raspberries, and sometimes I even add scrabled eggs, crumbled sausage, and shredded cheese. I love it for the 4th of July, when I serve blueberries and sliced strawberries over the top for a red, white and blue theme. For busy moms, you can make your favorite white cake according to the box, use a can of blueberry pie filling (12 in the cake and 12 on top after baking) and a container of cool whip - which is how I used to make this cake back in the 1970's.
