Marinated BisonBuffalo Steaks With a Peppercorn Sauce - December 18, 2007

I adore bison, it so low in fat and good for you and has a wonderful taste. This recipe has a wonderful tangy taste from the marinade mixed in with the pepper that comes through from the sauce. I served mine over buttery mushrooms and topped the steaks with asparagus wrapped in bacon. -- posted by The Flying Chef

Meatballs With Gravy - December 9, 2007

These are really tasty meatballs! The gravy is super easy and would be great with mashed potatoes. As usual I use venison. I think this would be a good recipe for OAMC-to make the meatballs ahead and freeze until needed. -- posted by Kaarin

Ostrich Steaks With Mushroom Vanilla Sauce and Wild Rice With As - December 8, 2007

Here is a recipe I have seen on a few sites, some have all the same ingredients, some vary. I have adapted the recipe for what Ingredients I can get in my part of the world and also for personal taste. It sounds like there are a lot of ingredients, with a lot to do, to make it. It is not as a big as it sounds and the end result is gorgeous, with all the flavours really coming together to create a wonderful dish. -- posted by The Flying Chef

Marinade for Venison Backstrap - December 5, 2007

I made my very first backstrap tonight, and it was magnificent! I searched all over for a nice marinade, and took a little from a whole bunch of different recipes to make this simple, flavorful marinade. We also painted it over some fresh veggies and grilled them along with the venison. This marinade will also work well with pork loin, chicken, or fish. After marinating, we wrapped the backstrap in bacon and grilled it. Yummmmm. -- posted by SheCooksToConquer

Today there are a handful of farms in the country where buffalo are raised, and this flavorful meat is gradually becoming available from specialty butchers. -- posted by Olga Drozd
