This is a hearty meal worth the time. The longer the chicken is simmered the more tender it will be. Be sure to keep the temperature on low. I don't make pasta very often, but whe I do, I load it up with veggies to cut down on the guilt. I never use frozen veggies for this dish becasue I find they get mushy during the cooking process.
