Spicy Zucchini - March 27, 2008

This was so good last night, I don't want to forget what I did! This was a great side dish for cheese enchiladas. Adjust the seasonings according to your tastes and the age of your kids. I used the lower end for my 6yo (who ate it without protest) and 20mo (who was not so fond of it). If I were to cook this for just the adults at my house, I would use the upper end. I used really small zucchini for this, less than an inch in diameter and about 5-6 inches long. -- posted by CraftScout

Chile Relleno Casserole (Lightened up Slightly) - March 24, 2008

I wanted to make a chile relleno casserole for a potluck, but didn't love any the recipes I saw. So I combined several recipes and made my own version. It has lots of green chiles and both jack and longhorn cheese, for maximum Tex-Mex appeal. The final dish is great to take for a potluck dinner, but can also be served for breakfast and brunch. It's best just out of the oven when the egg batter is fluffy, but it is still good reheated or even served at room temperature. A few notes about..

Spicy Texas Cilantro Chicken - March 22, 2008

Red and Black Bean Pies (With Polenta) - March 21, 2008

Tasty dinner that freezes well. 1 lb of ground beef or turkey can be added if desired but this makes a wonderful meatless meal. Looks really good if you bake individual pies in ramekins but tastes just as good in pie plates as well and is easier to clean so that's how I usually do it. Also since there is only three of us, I bake one pie plate for dinner and freeze the other for another night. Works great! Avocado Sandwich - March 13, 2008

My mom used to make these fantastic sandwiches when I was a kid and I've always loved them. I've made a few alterations to her basic recipe, and it's so good. This sandwich can be altered in many ways, including the additon of some salsa to spice it up.
