Tamari Lemon Marinade for Fish - April 14, 2008

This recipe is from the Black Dog Tavern's "Summer on the Vineyard" Cookbook. This marinade is great on grilled fish, such as salmon, bluefish, swordfish, or tuna. DH and I made this the other night to marinate our swordfish. We thought it was excellent as well as quick and easy. The cookbook also states that the marinade can be used to season cooked fish or vegetables as well. -- posted by Dr. Jenny

Savory Charred Marinade - April 10, 2008

This mariade is great on all kinds of meats, it use it mostly on chicken that you cook on the grill. My kids love when I grill wings ("buffalo" cuts) with this marinade. This is great for picnics or just a switch from barbeque sauce. This can also add great depth to barbeque chicken for a more complex flavor. Have Fun! -- posted by K-Jon Chef

Coriander Mint Chutney - April 8, 2008

This is a delicious, fresh-tasting chutney from Madhur Jaffrey's Indian Cooking. I love it! I generally serve it with any Indian meal I make, but I think it's equally delicious served along-side a grilled steak or chicken. I'll have to try it with my Wedding Chicken or with steak fajitas. Bet it would be great as a marinade for grilled shrimp too. Ok - you get that I think it's delicious. -- posted by charlie 5

Aj's Thai Marinade - April 3, 2008

Was used at our restaurant, cut down to make at home, still makes a TON! You can freeze it before using or freeze after you have added the meat - holds up well. Great on ribs, flank steak and chicken -- posted by me & alex

Best Marinade -Ever - April 3, 2008

From Barbeque Bible, Sauces, Rubs and Marinades, well, most of it! Added a little here and there and this goes with any kind of meat and great with veggies. With a few little changes here and there can be used differently each time... Fresh herbs work well, but so do dried, freeze dried and the ones that come in those little tubes!! Use as marinade or basting sauce.. NOTE -I use 14c basil and cilentro together, you can also use oregano or dill or any combination of the 4 - just measure 14c...
