This recipe makes great snack muffins for the little kiddos. It reminds me more of a quick bread than something cakey. These freeze very well. The original recipe calls for cream cheese frosting. I however have never added the frosting. Only much better, and entirely vegetarian (if you can find veggie mushroom gravy mix; Kroger carries it in Mississippi) with a vegan option that I didn't like quite as much as the cheesy version but was still pretty tasty. I came up with it in an effort to make pasta while lacking the technology to boil a pot of water but having an oven handy. It is so good in fact, you may find yourself making extra pasta just to make this dish! The cool thing about this recipe is that the Frittata can be made ahead of time! It can sit at room temperature for about 3 hours before serving! A friend passed on this recipe which she said was from Weight Watchers. If you make 40 cookies, it is 1 point each.
