Dutch Apricot Pie With Crumb Topping - January 28, 2008

You can have this all-year round if you freeze several portions of the apricots during the summer when they are plentiful! The crumb topping is what makes this pie SO special. Summer-time in a pie-plate--how neat is THAT! -- posted by Debber

Fudgy Low-Fat Chocolate Cake Bites - January 23, 2008

So I was looking for yummy 'health food' brownie recipes... I came upon a few... I swapped out a few things, some how added too much applesauce but none the less my mistake is a YUMMY mistake for chocolate lovers! So instead of brownies we get super moist cake bites! They are only 1 WW point & just over 50 cals, but they are kinda small. I normally eat 1 or 2 at a time. But they are full of flavor, Low cal, Low fat, pretty low carb & nearly sugar free!!! It doesn't get much better then.

Mildred's Salmon Loaf - January 22, 2008

My grandma's simple recipe for salmon loaf. You can use canned salmon, but this is so much better with the fresh stuff. I usually cook a whole salmon on the grill and then make this with some of the leftovers. -- posted by Aurora5

Seafood Pan Roast With Chorizo - January 16, 2008

Regina Shrambling featured this Northwest style dish in th LA Times. Unlike east coast versions, this one has no cream but lots of butter. It's rich and delicious and the chorizo adds a special note. -- posted by Chef Kate

Snack Attack Mix, Low Cal - January 9, 2008

I am on Nutrisystem and needed a low cal, crunchy snack for when I get the munchies or go to the movies and yearn for popcorn. I love chex mixes, but am not a huge fan of pretzels. This mix, however, can include FF pretzels if you wish...just add them in! -- posted by Tristan's Nana

I found this in Sunset magazine and wanted to keep it around it was delicious. Recipe calls for poblano chilis but they weren't avail in the store so Jalepenos did the trick. I also tried it with Mahi Mahi fish and it turned out excellent. Recipe can be halved. -- posted by Chef 411647

Sweetangerines Low Fat Low Calorie Ginger Cherry Oatmeal Cookies - January 4, 2008

These cookies are very good for a treat if you want to watch your weight. The credit goes to sweetangerines, but since I modified, one of the moderators suggested I post the modified version so there'd be nutritional facts. So, here it is! The original version used 2 tsp. of ginger and 2 tsp. of nutmeg. I don't like strong spices, so I cut those two items to one tsp. each. I also cut the dried cherries to one cup, down from two, because I wanted more "cookie" and less fruit. The.
