I found most pumpkin bread recipes too moist, and not particularly healthy. I've cut down on the sugar and oil content, and substituted oats and bran instead of just plain flour to add fibre and lower the GI score. Cooking time listed is the refrigeration time. I thought it might be fun to try it! Here is what the chef had to say: Tofu is the surprise ingredient in this vegetarian dish. It took me 5 tries before I got the results that I wanted and this recipe is the culmination of 3 years of tweeking! It makes a big batch of soup but I purposely make big batches since this soup freezes really well. I've even used it as a pasta sauce! You can adjust the "heat" to suit your tastes but I have a low tolerace for a burning mouth so as written this will have a small bite..http://www.recipezaar.com/317215 Garlic Herbed Roasted Red Skin Potatoes- August 1, 2008 These are great roasted red skin potatoes. Make sure you cook them a long time until they are golden brown. Usually takes about an hour for me. For the herbs I usually use rosemary, parsley, basil, and oregano.
