Its origin is Findon near Aberdeen, Scotland but found a new home on American shores in the colonies of New England. I used a packaged rice pilaf but you could probably use long grain and wild rice, or other flavours that you like with a chicken or vegetable flavour base. It is one of the few fish cake recipes that does not break up with being turned in the pan. I did add an egg to the original recipe. The Zesty Lemon Pepper Tuna in the pouch gives these cakes a little different flavor and we enjoyed them. It's recommended to use a seedy-pulpy raspberry vinegrette, and you can use lite if you wish.
