Steel-Cut Oatcakes - March 31, 2008

I am NOT an oatmeal fan. I have been searching for over a year to find a way to include oatmeal into my diet. I just don't like oatmeal. I tried steel-cut oats and able to eat a bite or two, but in the end the texture just is a challenge for me. I found this recipe in Bon Appetite (Sept. 2007) and thought it worth a try. It was great! Cook the oatmeal, chill, cut into pieces and cook on a griddle. While it is a two step recipe, it is quick and easy and worth the little bit of planning...

Crunchy Date and Almond Granola - March 26, 2008

Serve this with a sliced banana and some soymilk. Yum! Feel free to use whatever kind of dried fruit you have on hand. Raisins, chopped figs, dried apple slices etc. The almonds can also be replaced with your favourite type of nuts. -- posted by Little Vegan Devil

Strawberry Kiwi Oatmeal - March 14, 2008

I love coming up with new ways to eat my oatmeal in the mornings, and this is one that I've tried multiple times now. My roommate thinks it's weird to put kiwi in oatmeal, but then again, she thinks most of the things I eat are weird ;) This is kinda reminiscent of summer though :) I like to cut up the fruit at night, so I don't have to mess with it in the morning, since I like to hit the snooze button as many times as I possibly can before getting up... -- posted by qotw13
