Medical researchers say about one in every 130 Americans have Celiac disease, making it more prevalent than Down syndrome, Crohn&039;s disease, Type 1 diabetes and even Alzheimer&039;s disease. With symptoms similar to many other illnesses, however, 97 percent of cases go undiagnosed. The number of Celiacs aware of their condition may be small, but in Oklahoma they&039;re not alone.

Anyone who ate gluten-free food five or 10 years ago might understandably opt to avoid such food forever after. In the old days, "we used to joke that when you got the food, you didn&039;t know if you were supposed to eat the box or the contents," says Dr. Alessio Fasano, medical director of the Center for Celiac Research at the University of Maryland.

Codex adopts 35 international food standards - (Found July 19, 2008 )

Thirty-five new international food standards were adopted during last week&039;s 31st session of the Codex Alimentarius Commission, including guidelines on the use of flavourings and gluten-free products. In the first recommendations on flavourings, Codex defined the term and advised that they be used minimally, and in regards to gluten-free products, the body dramatically reduced the approved level of gluten allowed.

Feeling batter with wheat-free treat - (Found July 19, 2008 )

For many people a bag of salt and vinegar-soaked, crispy fish and chips is a regular treat. But for sufferers of gluten and wheat allergies the tasty meal is usually a no-go. Now hope is at hand after a shop opened in Tamworth offering an alternative and last night a group of allergy sufferers from the Black Country embarked on a 40-mile round trip to get their fix.

Gluten-free treats - (Found July 19, 2008 )

Studies show that about 10 percent of New Zealanders suffer from coeliac (pronounced see-lee-ack) disease, and many of them don&039;t know it. Symptoms can include chronic fatigue, bloating, headaches, itchy skin and irritable bowels. Coeliac disease is a life-long intestinal intolerance to gluten in the diet.

Fancy Foods 2008 -- &039;all natural,&039; &039;gluten-free&039; emerge among this year&039;s trends - (Found July 19, 2008 )

With the economy spiraling downward, it would be understandable if the mood at this year&039;s Fancy Food Show, which ended its run at the New York&039;s Javits Center on June 30, had been relatively subdued. To the contrary - I found it surprisingly buoyant. More than 2,100 exhibitors from 77 countries, as well as thousands of attendees who crowded the aisles over a three-day period, seemed downright cheerful.

Cabell-Huntington Hospital Provides Free Celiac Screenings - (Found July 19, 2008 )

Free screenings for one of the most unrecognized diseases were given Saturday. Health care workers provided screenings for celiac disease at Cabell-Huntington Hospital. The West Virginia Gluten Intolerance Group and the Department of Pediatrics at the Joan C. Edwards School of Medicine at Marshall University provided the screenings.
