Red, White, and Blue Jello - May 30, 2008

Jello and yogurt are a classic combination, and I prefer this to the typical cool whip layer. I prefer to boil the water in the microwave - 2 cups take about 2 minutes. I also stick my jello in the freezer for 10-15 minutes so it sets faster between layers :). I use a plain tasting yogurt, so add 12 cup sugar, but you can leave it out if you are happy with the flavor of your yogurt. Cooking time is time to set in the freezer. -- posted by Japan bound

Colorful Fruit Kabobs - May 27, 2008

This is basically fruit salad - on a stick! It's a great, healthy side for kids or elderly people who have trouble handling plates. It does take a bit of time to assemble, but the results look stunning at a baby shower, birthday party, or cookout! The goal is to make the skewer colors red, orange, yellow, green, blue. You can, however, substitute any fruit you'd like. You can also reverse the order in which you put the fruit on the skewer, and dip the bottom of the strawberry in chocolate....

Garlic and Bacon Roasted Potato Salad - May 9, 2008

This past weekend I went on a camping trip and my assignment was to bring the potato salad. I wanted it to be absolutely perfect so I started messing around with recipes the week before and threw out a few batches before I came up with this. The roasted potatoes enhance the flavor of the garlic and bacon and makes this a great tasting combination. This is best made at least a day ahead so that the bacon flavor can really combine and penetrate the potatoes. Everyone absolutely loved it and I.
