Raspberry Jalapeno Jam - June 27, 2008

There's just something about the abundance of summer fruit that makes me itch to preserve it :) I was so anxious to try this Raspberry Jalapeno Jam that I made my first batch with frozen raspberries (and it was fabulous!). You'll want to use the fresh frozen raspberries (the ones without sugar or syrup). My first batch made a total of 11 (4oz) jars. I used 2 jalapeno peppers and the "heat" was mild. I'll definitely increase to 3 jalapeno peppers the next time I make it. Use this jam over...

Chicken Salad with Fruit and Nuts - June 18, 2008

This Chicken Salad is great for summer and a nice way to use up some leftover chicken. This dish is a yummy combination of chicken with dried cranberries, apple and walnuts and it's low cal too! Pasta Salad with Tuna and Cabbage - June 13, 2008

This is one of those family recipes that I grew up eating and continued making myself over the years. Unfortunately, that means that there isn't exactly a written recipe for it anywhere that I know of. But ... it's too yummy and easy not to share anyway, so here it is.
