Cashew and Papaya-Crusted Snapper - June 15, 2008

Posted for the South and Central America stop on the Summer '08 Zaar World Tour, this dish was created by Donna Shields. The cashew plant is native to northeastern Brazil and adding cashews to this coating adds some crunch, providing a texture contrast for the soft fish underneath. Yum Yum Sweet and Sour Shimp En Papillote (In Parchment) - June 15, 2008

Delicious and simple, this recipe is good enough for company, yet easy enough for a quick, everyday meal. I like serving this right in the parchment -- just carefully cut the tops open and peel back the paper a bit. This recipe goes nicely with rice or cous-cous and a nice, cold glass of chardonney! :) -- posted by grumblebee

Feijoada - Brazilian Black Bean Stew - June 15, 2008

A vegan stew typical in Brazil. Prep time does not include bean soaking. You can probably streamline this by using the equivelent amount of canned black beans, rinsed and drained and skip the beginning step. -- posted by Parsley

Tunisian Carrot Salad - June 15, 2008

Not the typical shredded carrot salad. The carrots are sliced and cooked til fork-tender first. I added the red onion and a pinch of sugar. Make ahead and chill. Best if brought to room temp. for serving. -- posted by Parsley

This is an AWESOME low carb dish from a super cool blogger- I actually started composing poetry odes to Cleo in honor of her making a healthy alternative for Mexican Food. Cleochatra has invented a major amount of low carb dishes (and lost a ton of weight). I am posting it on Zaar because I wanted to get the exact nutritional values.
