So I decided to make this salad. It is such a pretty dish. The dressing is amazingly delicious and is perfect for a light summer meal. I didn't add the 12 cup soy milk to the salad because I liked the dressing just as it is. The recipe was originally handed down written to make a gallon of the dressing so we were always too lazy to do anything but halve the recipe ended up making 2 quarts of the stuff at a time.
