Creamy Asparagus "souffle" - May 12, 2008

An elegant but simple way to serve asparagus, this timbale is like a sturdy souffle that holds its "breath". And you can use up less-than-perfect spears; use a vegetable peeler to peel the tougher stalks so they will be tender. A stick blender does a nice job pureeing the mixture. -- posted by Lise in Indiana

Belgium Butter Crumbed Asparagus Eggs for Two - May 12, 2008

It is something of a timing feat for one cook to have the asparagus hot and crisp, the crumbs golden, and the Eggs Mollet all done at the proper time, so a shift from mollet to hard cooked eggs is perfectly in order if you wish. -- posted by Olga Drozd

Pickled Asparagus - May 7, 2008

This recipe was in the Picayune Item, our little local newspaper. I haven't tried it, yet. But it really looks fun and so easy, I just had to post it! I imagine this would be great with green beans, too. And the addition of some garlic and pepper corns...try it! -- posted by Trinkets

Vegan Asparagus Phyllo Rolls - May 6, 2008

These rolls can be great for an appetizer, side, or as a main course with a crisp salad. The seasonings work very well with the asparagus, and the walnuts give it almost a meaty bite and mellow flavor. They are a bit labor-intensive, but well worth the effort. -- posted by tendollarwine

Fresh Green Asparagus on Smoked Fish Fillets - May 6, 2008

This is an appealing and easy little starter. Buy the smoked fish at a deli or shop: the best would be smoked trout fillets, but smoked angelfish or salmon would be fine. I use green asparagus because we're not very fond of the white ones. Recipe serves 4. -- posted by Zurie

Skillet Sausage and Chicken - May 5, 2008

I came up with this when I had these ingredients that needed to get used up. This came together great and turned out to be a great one dish meal. I learned from reading an America's Test Kitchen cookbook that by cooking the vegetables seperately each vegetable will have their full flavor when you combine them later and it does taste much better that way after doing it. It might take a few extra minutes, but the flavor of the dish will be awesome! You may also enjoy this with steamed rice. --...
