Pipikaula (Hawaiian Dried Beef) - August 13, 2007

This one's from the Nu'uanu Congregational Church 1985 Centennial Cookbook. Pipikaula is like a flavorful jerky but NOT dried to a tough leather. It should be slightly moist and tender, kind of like a slab of pastrami. -- posted by Chilicat

Tropical Chicken Salad With Pineapple - August 3, 2007

Serve on a bed of green in a hollowed out pineapple half with crackers for an appetizer, in a wrap or on your favorite bread with lettuce and tomatoes. You won't need much mayo because of the juiciness of the pineapple distributes moisture keeping the fat down. -- posted by Rita

Glazed Pineapples - August 3, 2007

Top ice cream, fresh toast, pancakes, cake, grilled salmon, tuna or chicken ham, pork with these sweet Yummy pineapples. The jalapeno does work with the sweet dishes as well savory. Just a hint of heat. No fat. -- posted by Rita
