S'more Pie - May 29, 2008

Experimenting with ingredients I had in the pantry... I came up with this pie, that tastes just like the "Smores" we all want on the 4th or when camping. My DH said this was "Screaming" which means he loved it. Shhhh, won't tell him how easy it was to whip up. Salad Burgers - May 28, 2008

This recipe is a part of summer for me. My grandma gave the recipe to my mom, and my mom to me, but not sure where grandma got it. This is just the recipe for the veggies (salad) on top of the hamburger. I haven't tried it on Chicken or Turkey burgers, but I can imagine it'd be really good, too. Traditional Costa Rican Bean Soup - May 28, 2008

One of the local favorites in Costa Rica, it's a wonderful and comforting meal. Black beans are the best in my opinion! I would recommend spicing this up a little with some hot sauce or even some slices of fresh hot peppers! It's very simple to make as well. -- posted by sassafrasnanc

Sea Bass Ceviche - May 28, 2008

I've been a huge fan of shrimp and scallop ceviche for years but on my last trip to Costa Rica I discovered the wonderful sea bass ceviche that they serve in almost every restaurant. I had it every single night while there. It's just wonderful. The recipe calls for letting the fish marinade for 1 hour but I prefer at least 3 hours. Carnes Desmenuzadas (Shredded Beef) - May 18, 2008

A recipe from Nicaragua that I found at http:recipes.wuzzle.org. I have not tried it yet but it sounds interesting. It calls for sour orange juice which would be found in a bigger store where the exotic produce is or in the ethnic section in a bottle. The technique is a bit different in that you do not braise it long, and it has handy ingredients. Serve with tortillas and probably a spicy side dish or with a spicy topping. -- posted by WiGal

Kahlua Brownie Cheesecake Trifle - May 8, 2008

Taking all the ingredients I love in a chocolate trifle and came up with a winner in my house. The Kahlua, walnuts and cheesecake flavored pudding make this a nice rich chocolate masterpiece.
