Peruvian Flan - May 19, 2008

This Peruvian dessert came from fooddownunder.com. Whether it's stirred or baked, the key to successful custard is using gentle heat in a double boiler or bain-marie (water bath) so the eggs don't curdle. Flan should be made a few days ahead to set up properly. Any fruit would do for the garnish. The directions do not include the chilling time. Enjoy! -- posted by WiGal
