I don't know whose mother made this originally, but my family likes it. We usually substitute brown minute rice for the regular. Every bit of fiber helps! And you could use salsa instead of tomato sauce, if you like a spicier flavor. -- posted by Chef MB

Baked Brown Rice - May 14, 2008

I'm notorious for ruining rice, so I usually stay away from it -- until I found this recipe. It's Alton Brown's recipe for perfect brown rice, and it's great! I've made it many times and it really does turn out perfectly every time. You can use either medium or short grained rice. -- posted by Askosrose

Thai Green Curry Stew, With Shrimp and Veggies. - May 12, 2008

I just made this on a whim. I found this really great green curry paste (tiger tiger brand) and I'm making all kinds of tasty things with it! This makes the perfect single serving size for a chilly night. The proportions are fairly easy to up though. Also I live at high altitude, so your ricewater ratio may be different. Buttered Brown Rice - May 7, 2008

Easy and delicious side dish passed down from my great-aunt. Goes great with pork tenderloin! Note: Butter & onion quantities can be adjusted to taste - this is the closest to what I use on a regular basis, which is lighter on both the onion and butter than the original version. -- posted by EllenMoran
