"The only thing I know is subjunctive normally takes a plural verb." No, "were" here is not plural; it is the past subjunctive. The verb "to be" uses "were" for all persons: "If he were wise," "if you were mighty," and "if they were around" etc. In other verbs, the past subjunctive looks just like the past tense (indicative).
