Latin Stuffed Peppers - July 5, 2008

Many stuffed pepper recipes have Italian flavors; however, I made this one up when I needed a main meal that was healthy, flavorful, and Latin-themed. For a side dish, I suggest making some homemade salsa and serving with corn chips. -- posted by nush7

This was created during my days on Phish tour..... I sold it on the lots to pay for my concert tickets and living expenses. Although the recipe is vegetarian, I've had many people tell me they don't even miss the meat. Great for a family dinner, potluck, or side dish. Easy Tea-Less Chai - July 4, 2008

This is an easy home alternative for cofee-shop chai tea lattes. I leave out the tea because most of the flavor comes from the spices and not having to brew the tea makes it much, much simpler. If you're looking for traditional Indian Chai, or for a caffeinated pick-me-up, this is not it. Chli Cornbread Casserole - July 4, 2008

Dish serves 4-6 people. Chili Cornbread Casserole is a hearty dish that goes well with tortilla chips and sour cream. Try it with guacamole and salsa, it will be great!! Recipe makes one casserole with tons of extra chili to be frozen or used in other dishes. Chili will be spicy but not overwhelmingly spicy.
