Turkey Meatloaf - May 28, 2008

I combined 2 family recipes, and came up with this one night. I've always had ketchup on top, but my DH would rather have cheese. My DH loves this recipe and requests it all the time. It's easy to make, and I always have the ingredients on hand. Note: 14 lb. of saltine crackers is 1 sleeve, I use 34 - 1 full sleeve. Variation: you can also make a stuffed meatloaf by pressing the meat mixture down on a cutting board, spread some stuffing mix (or leftover stuffing) in the center of the meat..

Mom's Best Turkey or Hamburger Rice Casserole - May 28, 2008

I know there are a lot of different variations out there, but this is how my Mom made it for me and my picky siblings growing up!! It's a very good meal, and I won't be offended if anyone decides to add veggies, there aren't any in this. Every now and then when I have the time I'll chop up an onion and throw it in, and have thought about adding corn & stewed tomatoes. NOTE I normally use cream of chicken for the turkey variation and cream of mushroom or cream of celery for the beef...

Italian Turkey Burgers (Reduced Fat) - May 27, 2008

I have been playing around lately with trying to make different kinds of reduced fat burgers to go with the low fat eating plan I am on. This is my latest attempt. I used ground turkey breast so that I didn't feel that bad about having a little bit of fat from the sundried tomatoes but at least it is 'good' fats.
