Artichoke and Rice Salad - May 12, 2008

Inspired by a 1960 classic; this side dish calls for Arborio rather than conventional rice, resulting in a chewy and creamy textire. Coconut Shrimp With Sweet Soy and Chili Dipping Sauce - May 9, 2008

The best recipe I have found for coconut shrimp. The dipping sauce is a perfect Indonesian- inspired condiment. Ketchup manis is a sweet indonesian sauce. You can substitute 3 Tbs. soy sauce mixed with 1 Tbs. brown sugar if you can't find ketchup manis in your local asian food store. -- posted by Kathy!!

Thai Sausage Rolls - May 7, 2008

An Asian version of the old Aussie favorite. Lightly spiced and very nice! The quantity depends on the size you make, I made a smaller batch, by cutting pastry in 3 and this time I got about 40. Served with sweet chilli sauce they are delicious and I have also frozen these with great success. -- posted by Tisme

Thai Shrimp Lemongrass Salad - May 6, 2008

The Thai chili paste is sweeter and has lemongrass in it. You may find it in your local Asian store, or even from your local Thai restaurant. To make regular chili paste, sauté oil with yellow onion and garlic until soft, then add chili powder and paprika for color. I would grill the shrimp for extra flavor. This makes a small appetizer for 2 people, or a nice sized one for one. -- posted by gobruijns

Thai Burgers - May 6, 2008

This is my adaption of a Thai Burger recipe by Rachel Ray. The original recipe calls for 2 pounds of ground chicken breast. I used turkey breast and only about 13 pound per person. The burgers were shaped about 30 minutes ahead of cooking, allowing the flavors to blend somewhat. The burgers are delicious and moist. The dipping sauce really sets these apart. -- posted by PaulaG
