It reminds me of a rustic dish you could get at a little Italian eatery. Don't be daunted by the long list of ingredients, the meal comes together quickly. I have a gluten allergy and the polenta satisfies any bread cravings I might have. The dish is also a great vegetarian option, but I swear it will make any carnivore happy :) The vegetables can also be done in the broiler. -- posted by Breanna in T.Ohttp://www.recipezaar.com/300434 Zucchini Quiche- April 24, 2008 This is such a lovely summer time quiche. Since I'm not a BBQ sauce fan, I needed to find another way to utilize this delicious sausage. This is especially good served with pierogi. This dish holds up well for leftovers as well. -- posted by Hippie2MARShttp://www.recipezaar.com/299885 Golden Spaghetti Squash- April 22, 2008 From 1001 Low Fat Recipes. -- posted by dicentrahttp://www.recipezaar.com/299818 Butternut Squash and Chickpea Stew With Couscous- April 21, 2008 Vegetarian Times.
