Lentil-Walnut Loaf With Gravy - March 28, 2008

From The Complete Guide and Cookbook for Raising Your Child as a Vegetarian by Michael & Nina Shandler. I made this tonight with White Rose Child's Recipe 284051 instead of this gravy. (I had tagged her recipe for a recipe swap. I haven't tried this gravy in a while and her's was so good I may never go back!) I didn't have any nutritional yeast or kelp powder, so I just put in an extra teaspoon of (shhh! Kikoman) soy sauce. 1 cup of dried lentils made about 2.5 cups of cooked lentils..

Curried Lentil Loaf - March 27, 2008

Easy to prepare using the grater attachment on our food processor. Makes two loaves - eat one and freeze the other. Can be eaten cold the next day with salad. Any combination of suitable vegetables can be used but I would always make sure I used potato and at least one of pumpkin, carrot or sweet potato. Just play with the combinations to make up the measured cup amounts. -- posted by ballarat

Armenian Bulgur Wheat and Lentils With Sweet Peppers - March 25, 2008

A delicious meatless main course or hearty appetizer. This is adapted from a recipe in Feast From the Mideast by Faye Levy, with a few minor changes. Her recipe includes parsley, which you may add at the last step, but I'm not a big parsley fan so I omit it. Pureed Indian Lentil Soup - March 25, 2008

Another pureed soup for my husband on liquids after a few tooth extractions. :-) This one is based on one of his favorite curries, parappu - the south Indian equivalent of dahl or sambar. He wasn't allowed spicy foods, so I've swapped paprika for curry powder. If you're really adventurous, dry-roast whole spices in a skillet on very low heat until you can just start to smell the aroma and grind them in a coffee grinder instead of using bottled pre-ground spices. You can get indian curry leaves..

Ready in 30 minutes it is super tasty & super quick which makes it perfect for weekday nights! This is a delicious, healthy and quick soup with a lovely French flair -- and a great way to use leftover ham. The Puy lentils can be pricey, so you may want to substitute other lentils--they'll taste almost as good but they will not retain their shapetexture the way the Puy lentils will. -- posted by Chef Kate
