Shiritaki Noodles With Lobster Flakes and Fresh Tarragon - April 24, 2008

I came up with this recipe this morning. I wanted something creamy and delicious but low in carbs for lunch. I used a product called Kanimi Lobster flavoured seafood flakes. You could probably use real lobster, but this is much easier because these are ready to use right out of the package. I used fresh tarragon from my garden. Sundried Tomato & Roasted Pepper Frittata - Vegan - April 22, 2008

This is a delicious vegan version of the classic Italian omelette. The sundried tomatoes REALLY add a wonderful depth of flavor in this. Feel free to try different veggies in this too. Chopped broccoli, asparagus or spinach would be a nice substitute for the roasted peppers. NOTE: I have made this and skipped the broiling step. Just leave in the oven another 5-10 minutes to make sure it's firm. -- posted by Kozmic Blues

Vegan Fudgy Berry Ice Pops - April 21, 2008

Delish frozen chocolate yumminess. From vegcooking.com. I decided it was not quite sweet enough so added a bit of agave nectar as well. Just test it before you put it into the popsicle molds and adjust for sweetness as needed. The original recipe says it makes 8, but in my regular size popsicle molds it made 4. Cooking time listed below is freezing time. -- posted by AJO

Saag Tofu - April 17, 2008

This is a wonderfully easy recipe. With the yogurt and garam masala, the dish has a nice spice, but is not spicy-hot. I used 1 cup of fat-free plain yogurt. I highly recommend it for an easy weeknight meal. Serve it with rice. -- posted by Reddyrat
