This is the result, and has been so far the best roast chickenCornish hen I've made. Feel free to use a chicken instead, or a larger bird, though you should probably scale the ingredients to accommodate. Oven time will be longer too. This might also be good with other flavors of salad dressing mixes (Fiesta Ranch, Herb and Garlic, Mediterranean). You might also want to add some cheese. I sometimes add some chile powder to the seasoning mixture. The roasting and the balsamic give it such a deep taste, it was the best. I just had to share it! Traditional Chicken Cacciatore uses bone in chicken but I find that boneless skinless thighs stay nice and moist and make it easier to eat. No knife needed to cut the thighs, that's how tender they get. And don't worry about the garlic, it mellows into a sweet dream with the roasting. Make sure that you choose a beef brisket that has a good amount of marbled fat IN the beef (not the fat piece on the top....marble INSIDE the meat). Count on 10-12 hours of cooking time.
