Roasted Tofu, Asparagus and Radishes - Ww - January 25, 2008

This came from "Simply Delicious - Flexpoints Cookbook" from Weight Watchers. Out of all the recipes in there, this is the one that I want to try the most. At time of posting, I have not tried this. But I plan on doing so soon. I can't find tofu here in town so it will have to wait until I can get into the city to get some. The book says this is 2 points per serving. The numbers as presented here come up as closer to 3 points (2.9) but that is because it isn't counting on...

Gigot a La Cuillère - French Slow Cooked Spoon Lamb - January 23, 2008

A classic French Bistro recipe, and one that is SO easy to cook; the lamb in this recipe is cooked after 5 or 6 hours, but 7 hours is the traditional French timing for 'gigot a la cuillère' - a joint that can be carved with a spoon, hence its name! You will need a very large ovenproof casserole with a lid or a large, deep roasting tin, which you can cover tightly with tin foil - or, this can be cooked with GREAT success in the crock-pot. Orange Blossom Breakfast - January 22, 2008

While camping out with my son in the middle of Death Valley, we were limited on what we had to cook with. No Frying Pan or pot, only a small charcoal grill and Aluminium Foil. For breakfast we halved oranges, removed fruit, and filled with scrambled eggs. Also, we had bisquik mix added to more halved oranges. Maybe it was waking up on the cold desert ground, and rekindling the campfire that made this so good. Since I live in Sunny Florida now, I think the name is appropriate. -- posted by..

Turkey, Vegetable and Roast Potato Pie - January 16, 2008

This delicious pie is always a huge hit with our family. This comforting casserole pie is filled with vegies and turkey in a creamy mustard sauce which is complemented by the cheesey crisp potato topping. Its perfect to make if you have any leftover turkey and roast potatoes from Christmas day or dinner the previous night. I got this recipe from a "Christmas leftovers" special in a magazine and have adapted it to my family's likings. You could also use leftover ham or chicken in place.

Pot Roast in Tipsy Gravy - January 15, 2008

Low-fat roast veges.You can roast any veges of your choice this way and you can try different herbs and spices if you wish to. Serve with gravy, drizzled with lemon juice or -as my children like -drizzled with tomato sauceketchup. You can also used all-purpose seasoning herb and spice mix if you wish. Roast Chicken - January 15, 2008

This chicken was so good -- the original recipe says to use fresh rosemary (14 cup) but I used dried and aso to use 5 juniper berries which I skipped. Although the original recipe calls for a 5-6 pound chicken, my chicken was closer to 3 pounds (to serve 4 people) and it worked out fine. We served this delicious chicken with chinese vegetables (frozen) for an almost no-work dinner. Recipe source: Bon Appetit (February 2008). -- posted by ellie_
