Tried it out and it was really good. I adjusted some of the quantities to my taste (I'm a big garlic & cheese lover), so feel free to reduce the garlic or blue cheese as it might be a bit much for some. However if you're a fan, like me, this will definitely hit the spot. Muffins store great in a covered container in the refrigerator - just warm in the microwave. I have been experimenting with cooking low fat and low cholesterol recipes for my husband. So, heres a recipe for those who enjoy hearty breads that are at the same time light and have a rich flavor. This recipe makes a very good and relatively dense bread, but one that is not very sweet. Consider adding dried cranberries for an added tartness. For sweeter crackers, eliminate the egg wash and sea salt, and instead lightly brush the crackers with equal parts honey (or agave syrup) and water. Continue to bake as described. The crackers can also be baked plain. This is wonderfully satisfying, similar to All-Bran or Fiber-One cereals, and very easy to make! I created this recipe by modifying a bran flakes recipe I found online so that it would be gluten free (original recipe by Homemaking booket, Mormon Church, 1978 - found at astray.com). Be warned, you don't need to eat much to be full with this cereal (roll it as thin as you can)!
