Praline Muffins - January 30, 2008

Great quick and easy recipe from New Orleans, Louisana "Cajun Cookin' School". Picked up the recipe at their storekitchencafe on my way back from Katrina Hurricane Relief along the Gulf Coast of USA. Crabby Cajun Dip (A Light and Easy Crab Dip) - January 29, 2008

Cajun Crock Pot Steak - January 29, 2008

Thought I'd try a variation on good old beef stew. I used Schwartz Blackened Cajun Seasoning but I'm sure any other cajun spices would do. I used casserole steak (chuck steak or braising steak) - use your own preferred joint. I also shredded my veg using a food processor as my SO doesn't like chunks of carrot. Herb Dumplings added a nice dimension to the dish. I'd suggest saffron rice as a good partner for this dish. -- posted by live to cook

Wintzell's Gumbo - January 22, 2008

According to DH, the world's best gumbo is served at Wintzell's Oyster House in Mobile, AL, so I was really excited when I received Alabama's "Thicket" magazine with the recipe for it inside. Wintzell's has been in business since 1938, was named in Willard Scott's All-American Cookbook for the Best Oysters and Crabs, and has been featured in Southern Living Magazine. I'll probably do a mixture of shrimp and oysters for the gumbo instead of using just oysters. If you're ever near...
