Chicken Gumbo - February 27, 2008

This is my mom's recipe, which she sent to me while I was far from home on a Supar Bowl Sunday and craving a good meal to remind me of great family moments during Super Bowls past. I've had it over rice and couscous, and rice is better, but couscous is good, too. -- posted by runningchef

Amorous Nerdium's Tuna Fish Salad Melts - February 26, 2008

Spicy rendition of the classic tuna fish salad sandwich covered in melted cheese. You will need a sandwich maker. It is similar to a George Foreman grill, but it is made for sandwiches. It creases the bread to keep the insides from falling out once they melt. -- posted by Amorous Nerdium

(Almost) Instant Jiffy Jambalaya - February 25, 2008

Use "cheater" ingredients such as jarred pasta sauce, pre-cooked sausage, and minute rice for a delicious and quick jambalaya. It tastes so good you won't even know it isn't authentic creole! (shhh - don't tell anyone) This recipe was invented out of neccesity. I wanted a quick and easy to prepare jambalaya without having to deal with the time consuming process of doing it the old fashioned way. This makes great leftovers too - perfect for packing in a thermos to take to workschool..

Jambalaya - February 24, 2008

Being from the South, I enjoy cooking many Cajun dishes, one of these is my take on Jambalaya. My Asian friends beg me all the time to make this dish so I hope you will enjoy it as well. -- posted by Mr Dan1960

Bourban Chicken - February 24, 2008

I love Chinese Food and this dish surprised me since it was served at several Chinese Outlets yet it's not Asian in origins. So I set out to duplicate this dish and here is my best effort. All my friends swear by it. -- posted by Mr Dan1960

Easy Cajun Shrimp - February 23, 2008

This was so simple and tasty with just the right amount of heat. I served it with a pre-packaged Cajun style rice but it would be great with white rice also. -- posted by Teresa in Charleston

Cajun Patty Cakes - February 23, 2008

This is a simple tasty dish I whipped up to serve to friends during summer picnics and is also good for those cold winter days when you're stuck indoors and you want to kick it a little. You can eat the cakes as is or put them on buns I Like Putting Them On Whole Wheat Buns With A Dollop of Spicy Garlic Dill Mayo. -- posted by Mr Dan1960
