Chicken and Andouille Sausage With Peppers (Ww 5 Points) - March 19, 2008

My personal rendition of a WW recipe that I love because it packs all the flavors of NOLA while managing to be both fast and light. The level of heat here varies so much based on your brand of Cajun spice and sausage - so taste and adjust accordingly. For those who do count points, try finding the lowfat chicken andouille sausage. Half the points of the regular so you can add more to the dish. Cajun Meatloaf My Way - March 13, 2008

Base of this meatloaf comes from Paul Prudhomme with a tiny bit of modification. I added the sweet and sour sauce that is often used for meatloaf and the result is wonderful. It is very important to mix the meat mixture well. This is my favorite meatloaf. -- posted by Rinshinomori

This is my friend Terri's recipe for delicious and oh-so-easy baked jambalaya. Feel free to get creative, add shrimp, other types of meats and sausages. Shrimp in Cajun Beer Broth - March 4, 2008

Having purchased large head-on shrimp, I wanted to do something other than steam them. I decided to cook them in a broth to take advantage of the extra flavor the heads would lend. My boyfriend loved the broth so much that he practically drank it. We put it over bowls of rice to accompany the shrimp, wishing I had a loaf of garlic bread to dip in it. I used red onion because I had it on hand, but any combination of onion, garlic andor shallot would be delicious! I think I will saute diced...

Bourbon Chicken - March 4, 2008

A simple, fun bourbon chicken. Uses real bourbon, so don't use this recipe if you're alcohol-intolerant. Use good bourbon, but not great bourbon. Nothing you wouldn't drink. If you've seen any of my other recipes, you'll see I use corn starch a lot. It thickens a sauce and smooths a grainy texture without adding a lot of saturated fat or calories.
