You can substitute any veggies you like or have on hand. My daughter loved them and wanted the leftovers for dinner the following night. I used all organic ingredients, except for the enchilada sauce, they did not carry it at my healthfood store. Next time I will make my own enchildada sauce and post my results. This recipe came from The Culinary Chase Blog. I will post the seasoning recipe separately, but for this salad you will need about 1 tablespoon of dukkah to sprinkle on at the end with the feta.
